Personal data is any information relating to an identified or identifiable natural person; an identifiable natural person is one who can be identified, directly or indirectly, in particular by reference to an identifier such as a name, an identification number, location data, an online identifier or to one or more factors specific to the physical, physiological, genetic, mental, economic, cultural or social identity of that natural person.

Personal data also includes information about your use of our website. In this connection, we collect personal data from you as follows: information about your visits to our website such as, for example, the scope of the data transferred, the location from which you retrieve data from our website as well as other connection data and files and further contents which your retrieve. Purpose of use and personal data concerned
The scope and nature of the collection, processing and use of your data depends upon whether you simply visit our website to retrieve information that is generally available or whether you access services via the Environment or Pharmaceutical portals and use these additional services.

For the informative use of our website, it is not, as a basic principle, necessary for you to provide any personal data. On the contrary, in this case when our websites are called up, we only collect the data which your Internet browser automatically transmits to us, such as

b) Use where further services are requested

When you book events, like training courses, through the Event portal or register in the Environment or Pharmaceutical Portals, it may be necessary for you to provide personal data.

Which personal data is necessary for us to be able to provide the service is shown in the respective input mask.

As a prerequisite for the registration of the Environmental or Pharmaceutical portal, only essential personal data is collected, processed and used to ensure that only you have access to your information. Through the Pharmaportal, users have the opportunity to track the commissioned studies and see the results. The health related data is shown on the Pharmaportal only in pseudonym form.

We will only collect personal information that is necessary to fulfill the service you have selected, such as your postal address for billing purposes, when choosing the "on account" payment method. In the event that you choose a different payment method, for example, via credit card, you will be redirected to the pages of a third party. We point out that we have no influence on the collection, processing and use of personal data by this third party, so this privacy policy does not apply to the third party.

You can give further details on a voluntary basis. You can identify which details are necessary and which are voluntary through the fact that details which are necessary are in each case marked with an asterisk (*).

Allergenmanagement – Rückstands- und Reinigungskontrollen in Lebensmittelbetrieben

- Die beste Absicherung gegen Kreuzkontaminationen -

Die Kontamination mit Allergenen ist in der Lebensmittelbranche nach wie vor ein wichtiges Thema. Mit der Lebensmittelinformationsverordnung (EU) 1169/2011 (LIMV) wurde festgelegt, welche Stoffe als allergen gelten und gekennzeichnet werden müssen. Die Kennzeichnung ist für vorverpackte und lose Ware verpflichtend.

Allen Betrieben, die Lebensmittel herstellen, verarbeiten, transportieren, lagern und/oder verkaufen wird daher ein präzises Allergenmanagement empfohlen. Es hilft dabei die wichtigsten Ursachen für den unbeabsichtigten Eintrag von allergieauslösenden Stoffen im Blick zu behalten. Im Fokus stehen dabei:

  • verunreinigte Rohstoffe,
  • Kreuzkontaminationen während der Produktion und
  • die Verpackung und Lagerung.

Ein wichtiger Teil des Allergenmanagements sind deshalb regelmäßige interne Kontrollen und Probenahmen in sensiblen Bereichen. Sie verhindern kontaminierte Produktionschargen und im schlimmsten Fall Produktrückrufe.

Zur Bestimmung der Allergenbelastung können verschiedene Methoden der Probenahme angewendet werden. Möglich sind:

  • Beprobung von Rohstoffen, Zwischenprodukten und Endprodukten

  • Tupfer: direkter Oberflächenabstrich, z.B. in Produktionsanlagen und Maschinen

  • Spülwasser aus Reinigungsvorgängen
