The principles of the German Food Code (DLMB) define tea products and herbal infusions as follows: ‘Tea’ consists entirely of leaf buds, young leaves and young shoots that produce black or green tea, depending on their fermentation. ‘Herbal infusions’ such as fruit or herbal teas contain dried leaves, blossoms, fruits, bark or roots.
Tea and herbal infusions are analysed to determined their sensory, microbial and chemical parameters. Foreign substances and contaminants (e.g. plant protection agent residue, mycotoxins) and contamination with microorganisms (e.g. spoilers, pathogens) require particular attention in this regard.
Monitoring of labelling and composition is recommended.
