Delicatessen products like pre-packed salads with animal (meat salad, fish salad) and/or vegetable ingredients (fruit, vegetable or potato salads) are very popular among consumers as ready meals.
The ingredients in delicatessen salads are cut up into small pieces, which means they are classified as perishable foods from a microbial perspective. In addition to microbial analyses of hygiene indicators, pathogens and spoilers, we therefore provide you with shelf life studies to back up the sell-by date as well.
We advise that you also request us to analyse the protein metabolite histamine in fish salads.
Among others, the principles outlined in the German Food Code (DLMB) for delicatessen salads and vegetable products provide the legal foundation in this respect. The principles defined for mayonnaise, salad dressing and remoulade are also applied in addition to the Regulation on Approved Food Additives (ZZulV).
